Butter Beans with Chorizo

Butter Beans with Chorizo 

(serves 4) 

The flavours of Spain – in one pot! You’ll love this tasty one-pot supper (less washing up and lots of flavour!). What really makes it special is the quality of the basic ingredients. You’ll never tire of it.

150g chorizo 

1x410g butter beans, drained 

1 teaspoon smoked paprika 

¼ cup white wine vinegar 

2 tablespoons Old Brown sherry 

2 garlic cloves, chopped 

2 lemons, juiced 

1-2 tablespoon fresh mint, chopped



Cut the chorizo into 0.5cm slices, and then halve it

Fry the chorizo in a pan until brown. 

Add the butter beans. 

Mix the paprika, vinegar, sherry, garlic, and lemon juice. 

Pour the sauce over the bean mixture into the pan.  

Fry until the vinegar and sherry have evaporated.  

Serve warm and sprinkle mint leaves over.
